The Southern Forest region includes Pemberton, Northcliffe, Manjimup, Walpole and other towns in the Shire of Manjimup. It  has a mild Mediterranean climate with cool, wet  winters and warm summers  and some of the highest rainfall in the state. It is home to Karri, one of the largest trees in the world and a diverse range of endemic flora and fauna. With rich Karri-loam soil, it is prime agricultural land for farming, including potato, avocado and beef as well as berries, vegetables, wild food, such as marron and bush food such as finger lime. It's  worthwhile stopping at a 'Veg 100m' stall for in season produce.


Hidden River's chef-owner Ardal creates his menu from the seasonal and diverse local produce and brings in flavours from around the world to enjoy with your fabulous local wine.

What's EVOO?

Extra Virgin Olive Oil - we get it from the Pemberton Olive Oil company.

What's chermoula?

Chermoula is a north African marinade. We make it  with onion, garlic, parsley, coriander, red and green chilli, paprika, salt and pepper, saffron and ginger.


What's za'atar?

Za'atar is a popular condiment of  dried oregano and thyme, sesame seeds, sumac and seasoning.  It is used throughout the Middle East in both meat and vegetable dishes.


What's sumac?

Sumac is a spice made from the red fruits of a sub-tropical small tree species, Rhus. Its lemony taste is used to add flavour to meat dishes and salads in Middle Eastern cuisine.


What's in the dukkah?

The dukkah is made at Hidden River Estate from walnuts, sesame seeds, coriander seeds, cummin, fennel, dill, black & white pepper, cinnamon and salt flakes.


What are fingerlimes?

A  bush food (Citrus australasica) native to eastern Australia's rainforest, found on a thorny understorey tree, now commercially cultivated in Pemberton.
